Thanksgiving Festivities

We had a fabulous Thanksgiving weekend. I always love when KC is home :) Owen and I started the day making lots of cookies for dinner

Jack was more of a bystander and napper during cookie time:)

Then we went to KC's Aunt Kim's home for dinner. It was great because all her children were there too so we had a fun little thanksgiving with their whole family.

They had a big pile of leaves in their yard and Owen was playing in them but he wouldn't pose for a picture so I made him sit in the leaves and he didn't like that at all.

We went to the mall on Black Friday. I know! Crazy! but we wanted to get out. It wasn't that bad, although we did help a lost little girl find her dad. At Sports Authority we played with the golf clubs and can I just say, Owen is the cutest little pretend golfer ever! :) I know I'm biased but I'm just saying.

And finally, last night I made another batch of cookies. This was a new chocolate chip recipe and I'm pretty sure it's my new favorite.

The recipe is from a blog called Apple a Day: http://kelseysappleaday.blogspot.com/2011/08/best-ever-chewy-chocolate-chip-cookies.html

Best-Ever Chocolate Chip Cookies
barely adapted from Anna Olson, Food Network Canada

Ingredients:
3/4 c. unsalted butter, softened
3/4 c. brown sugar
1/4 c. granulated sugar
1 egg
2 tsp. vanilla extract
2 c. all purpose flour
2 tsp. cornstarch
1 tsp. baking soda
1/2 tsp. salt
1 c. bittersweet chocolate chips

Directions:
1.  Preheat oven to 350 degrees F.

2.  In the bowl of a stand mixer fitted with a paddle attachment, cream together butter and sugars until fluffy and light in color. Add egg and vanilla and blend in.

3.  Mix in flour, cornstarch, baking soda and salt. Stir in chocolate chunks.

4.  Using a standard-sized cookie scoop or tablespoon, drop dough onto a prepared baking sheet.  Bake for 8-10 minutes, until barely golden brown around the edges.  (The tops will not brown, but do NOT cook longer than ten minutes.)

5.  Let cool, on the sheet, on a wire rack for five minutes.  Remove from baking sheet and let cool completely.  Try not to eat them all.

PS. Just a reminder, I'm making my blog private at the start of the new year so email me if you'd like to have access to it still :) thecowles@hotmail.com

Jason and I are so sad we couldn't make it to Aunt Kim's for Thanksgiving. We miss all of you. Your boys are so cute! They both have the best smiles! Also, those cookies look delicious!
